Six Flags Fiesta Texas in San Antonio is kinda just a big collection of rollercoasters. They have several other rides and attractions though for Texas thrill seekers and also, when I went anyway, minimal wait times.

Be patient Texas. It will be about 2 years before it opens but there IS a Universal theme park coming to the lone star state.
