My favorite part of every meal is the side dishes. I love the variety they offer and the different flavors I can incorporate into one meal.

When I'm eating a meal I like to get a small amount of every side on my fork and then finish it off with the main course. I do this so I can get every flavor in every bite!

TEXAS' SIGNATURE DISH

I started to think about the side dish that best represents Texas.

I have lived in West Texas my whole life and there are a few sides that I have to have with every meal. I am Latina so of course the top two side dishes in my household are Mexican rice and refried beans. I can eat this with every meal and more times than I can count have eaten it as the main course. Just give me some tortillas and I'm set!

While those may be my household's signature side dishes, I started to think about what Texas is best known for. So many different options came to my mind, like mashed potatoes, fried okra, macaroni, or even green beans.

If you thought the same thing you are about to get the shock of your life. According to Stacker.com Texas' Signature dish is Texas caviar. I was shocked when I read this because I had never heard of it before! The dish, also known as "cowboy caviar," is a mix of black-eyed peas, black beans, corn, tomatoes, and bell peppers. It was created in the 1940s.

If you were surprised by Texas, wait until you see the other state's signature side dishes.
